Great question!
I have no idea!
I'll have to think about it. A few places come to mind.
Italy. I would fly to a little town in central Italy to wander through the hills, visit my long-lost family and just enjoy the country. Ideally I'd spend some time in places like Venice and Rome and Florence and all that, but mostly enjoying the smaller towns.
or Ireland. beautiful countryside.
Just this morning I read about Sting and Trudie Styler's Italian villa in Tuscany. Where they grow organic vegetables, have olive groves and honey bees, and a full-time chef. The whole thing sounded very idlic and relaxing. Apparently, they are going to start exporting their honey and olive oil products to the United States soon. I'd probably do the same thing. Ruin a perfectly good vacation spot with work!
Alaska for some heli-boarding. (Must figure out how to bring my bros.)

New Zealand. A small town where they have sheep and nice wool. Hopefully someone there would have a spinning wheel and they would make yarn. Then, I would get some lovely yarn and knit to my heart's content! When my hands and eyes needed a rest, I would go for a long walk and take a book so that I could stop beside a little babbling brook and sit on a soft patch of thick moss and read. Ahhhh. Just thinking about it has given me the boost I need to get the stew on and water the garden. Thanks for the breath of fresh air!
Ireland, no question. I'd visit a castle or two, imagine the battles that occurred on the hillsides. I'd sit for hours just listening to the sounds of Ireland, watch the hills and see how many shades of green I can see, watch sheep graze in a meadow far below me, gaze at a river that flows clear and blue. Pack a backpack with some food and all the books I can stuff in it and sit among ruins imagining that I am back in that time period (somewhere in the 14-1700's) and read for hours and hours.
Aaahhh...it's so fun to dream.

I was going to answer Alaska, then noticed that someone already wants to go there. I won't be joining the heli-board group, I want to see the sun circle the horizon and view the glaciers.
Apparently I need to figure out how to bring my mom too. :)
Right now, I would go to this cabins in the Smokey Mountains. You have to have a 4-wheel drive to get up there. I would sit on the porch and look out over the valley. Ahhhhhhhhhh
